Production

Coordinate production across the network.

A visual process editor, versioned and published to every shop, with quality control, competency traceability and a fermentation twin that gives you honest time ranges. Every shop bakes with the same discipline without losing its judgment.

How does one process reach every shop the same way?

You draw it once in a visual editor, version it, and publish that version to every shop. Quality checks ride inside the steps, competencies record who may run them, and the fermentation twin returns honest time ranges. Change a recipe and the previous version stays readable, so an audit can follow both.

Every step of the process is versioned. If you change a recipe, the previous version stays available. Auditable end-to-end.

What does this cost today?

  1. New recipe = 7 trainingsEach shop learns its own way. In 3 months, each bakery produces a slightly different version. The brand dilutes.
  2. Invisible bottleneckOne shop loses 30 minutes every Sunday in the proofing stage. Nobody knows because nobody measures it.
  3. No competency traceabilityYour star baker leaves. Nobody documented what they knew. The next 3 months are retraining.

And what changes on an ordinary Monday?

Recurring training vs. distributed discipline.

What is underneath?

  1. Visual process editorDraw the flow on a canvas — stages, branches and rework loops — publish a version and every shop runs it. Fully keyboard-operable: the canvas is a single tab stop and every stage is reachable without a mouse.
  2. Quality template versionsChecks calibrable per shop, versioned, auditable.
  3. Bottleneck analysisIdentifies bottlenecks per shop with real-time + historical data.
  4. Competency trackingMaps what each person can do. Alerts when a skill is lost.
  5. Variant authority, stage by stageHead office locks the stages that define the brand and opens the ones a franchisee may adapt. A shop variant never mutates the master, and a locked stage refuses the edit instead of silently discarding it.
  6. Labour inside the cost, not beside itMinutes of work are declared per recipe stage and priced with that shop's own labour rate, so the cost of a loaf splits into ingredients, labour and overhead instead of one blended number.
  7. Trials with the formula frozenA trial with its arms, each pinned to the exact recipe version it was made with — the recipe can keep changing; the trial does not move. The comparison arrives on one screen: cost, nutrition and allergens per arm, with the difference against the control. Closing one requires writing the verdict and what was learned, which is the part you go looking for two years later. No minimum plan: it is on every plan.

What else gets asked before deciding?

  • How do I deploy a recipe change without breaking production?

You publish v2 while v1 keeps running. Each shop gets a notification, confirms read, migrates when ready. Rollback available at all times.

  • Does it help with fermentation?

Yes. You enter the dough temperature and the yeast %, and it gives you an honest time range (±, never a false-precise number) with corrective levers: raise or lower temperature or yeast, plus a water-temperature calculator (DDT). It auto-calibrates every night with your own bakery's logs.

  • What quality checks are included?

Temperature, weight, hydration, proofing time, color, shape — configurable per recipe. Optional photos via mobile app.

  • How are bottlenecks detected?

Compares standard vs actual times per step. If a step loses >20% time in 3 consecutive runs, it alerts.

  • What is competency tracking?

Each person has a skill map (breads, pastries, cakes, quality control). If a skill drops to 0 qualified people, it alerts.

  • Does it work if internet drops?

Yes. Mobile app in full offline mode. Data syncs when connection returns. Ley 1/2025 ready even without coverage.

  • Where do I write down the R&D experiments?

In trials, available with no minimum plan. Each arm is pinned to the exact recipe version it was made with, so the recipe can keep evolving without blurring the experiment. The cost, nutrition and allergen comparison across arms arrives on one screen, and closing a trial requires writing the verdict and what was learned. You search by objective tag, which is how 'have we already tried this?' gets answered.
