Your oven is talking. We listen for you.
MQTT, OPC-UA and Modbus, plus connectors built for Wachtel and Rational ovens. Sensor data, anomalies and predictive maintenance in a single operations layer.
What can an oven tell you once it is connected?
When it ran, how hot it was and when it stopped. Readings arrive over MQTT, OPC-UA, Modbus or a REST poll, and connectors are built for Wachtel and Rational ovens; neither vendor is a partner or an endorser. From there come OEE per machine, anomalies by three methods, and work orders.
BakeWise monitors, detects and recommends. It does not act. Every maintenance decision is yours — with evidence on screen and full traceability from sensor to alert.
3 problems you do not see
The machine warns. Nobody listens in time.
- The beep nobody loggedThe operator heard it at 03:40. Kept baking. No ticket opened. Tomorrow, another beep.
- The Wachtel drifting for 3 daysTemperature has been +4°C since Tuesday. Product looks fine today. Not fine on Friday.
- When does the bearing fail?Remaining useful life is the question a visual inspection cannot answer. A Weibull curve can.

MQTT, OPC-UA, Modbus — plus connectors built for the ovens you already have
Standard industrial protocols, plus connectors built for the most common oven brands in Spain.
| Connector | Status | What it does |
|---|---|---|
| MQTT | Industrial | IoT pub/sub standard. Our broker or yours. |
| OPC-UA | Industrial | PLC/SCADA standard. Real-time tag reading. |
| Modbus | Industrial | TCP and RTU. For legacy installations. |
| REST API | Industrial | Configurable polling. For equipment with HTTP API. |
| Wachtel | Built | Connector built for Wachtel rotary and convection ovens. Wachtel publishes no public API; the connector targets the interface a plant exposes and is switched on per installation. |
| Rational AG | Built | Connector built for Rational iCombi and SelfCookingCenter through ConnectedCooking. Commercial use of that API needs Rational's approval, obtained per customer — the connector ships, the approval does not come with it. |

Z-Score, IQR, Isolation Forest — each for a different pattern
- Z-ScoreKnown normal distribution. Ideal for temperature and humidity with stable history.
- IQR (Inter-Quartile Range)Non-normal distributions with tails. Robust against individual outliers.
- Isolation ForestMultivariate. Catches anomalous combinations (temperature OK + vibration OK, but together unusual).

What we just switched on
Four capabilities built and wired, exercised on the demo stream. None of them is a roadmap promise, and none of them is a customer plant we are quoting.
- Energy cost per batch and tariff periodsSet up your electricity contract (2.0TD, 3.0TD or 6.1TD) with its per-period prices and the platform prices every batch at the P1–P6 period it actually ran in, national holidays included. The daily plan proposes moving flexible batches into the off-peak period and tells you what you save.Chain plans and above. Requires electrical submetering and a configured tariff.
- Live floor viewOne screen with the current status and readings of every oven, cold room and mixer in the bakery, with a TV mode for wall mounting. Readings arrive either directly from the equipment or through a data bridge that forwards the measurements.Chain plans and above. Requires at least one connected machine.
- Cold chain that logs itselfConnected cold rooms and freezers write their temperature into the food-safety record with nobody walking a clipboard. The report separates sensor readings from manual ones, documents any loss-of-signal period instead of leaving a gap, and takes the supervisor's daily sign-off.Chain plans and above. Manual logging remains audit-valid with the responsible person's signature.
- Work orders with a verifiable historyBreakdowns, inspections and calibrations stop being loose notes: each intervention is an order with cost, parts, vendor and attached documents, cryptographically chained so the history is demonstrable to an auditor. Prior history imports by CSV.Basic record on all plans. Costs, attachments and export on Chain plans and above.

Questions we get
Which ovens do you support?
Connectors are built for Wachtel and Rational; neither is a partnership or an endorsement. Any other brand that exposes MQTT, OPC-UA, Modbus or a REST API works too; for legacy installations a Modbus gateway covers most cases.
Which industrial protocols do you support?
MQTT (IoT pub/sub), OPC-UA (PLC/SCADA standard), Modbus TCP/RTU (legacy installations) and REST API (configurable polling). Together they cover over 95% of industrial ovens and food packaging lines.
Who owns the sensor data?
You do. EU hosting, free export via API or CSV. No vendor lock-in. We do not sell or share the data with anyone.
How do you calculate the economic saving of catching an anomaly early?
With your history of unplanned downtime × your declared hourly cost (lost production + rework + waste). The methodology is part of the discovery phase; we do not invent generic numbers.
Does this work for an industrial plant, not just a bakery?
Yes. The same MQTT/OPC-UA/Modbus stack is used in packaging, pasteurization and industrial fermentation chambers. On Group we deploy the food-manufacturing vertical with a custom SOW — typically 6-10 weeks.

Beyond the bakery
Ready for the food-manufacturing vertical
Bakery, continuous oven, packaging line, fermentation chamber — the same IoT architecture serves industrial installations. If you are scaling from a bakery chain to a production plant, the same MQTT / OPC-UA / Modbus connectors cover you.
